Effects of electrochemical activated water during germination on moisture and diastase activities of germinated wheat and paddy

Abstract

Electrochemical Activated Water has been studied and applied in many fields such as medicine, agriculture and food. Using anolyte solution pH 2.5-4.0 for disinfection allows to reduce the infiltration from 6lg to 7lg. Catolyte solution pH 8.5-10.5 was used for soaking seeds and replenishing moisture during germination. Seeds were soaked at temperatures of 20, 25, 30 oC to reach a moisture content of 42-43%. Study germination at 15, 20, 25 oC for 4 to 6 days. Green malt was dried at a temperature not exceeding 65 oC until a moisture content of 5% to 6%. Determining suitable regimen for harvesting wheat malt using electrochemical activated water solution is to soak seeds at 25 oC and seed germination at 20 oC. The results of the study show that the use of electrochemical activated water solution allows a significant increase in the amylase activity of the finished malt by 10-15% compared to the control sample.
